Metal Fork, plastic knife... At a steak restaurant?

I'm sitting at a restaurant at La Guardia that serves $50 steaks... They better be very tender!
Even after a wknd in a hotel room over-looking Ground Zero, I cannot comprehend the logic at work here.
I'm getting a burger...
